At a glance
Make a cinnamon dolce latte with espresso, milk, brown sugar, and cinnamon. Includes a quick single-cup method and tips for spice settling and foam.
A cinnamon dolce latte is a sweet cinnamon-flavored espresso and milk drink. This home version makes a quick brown sugar base in the mug rather than a bottle of syrup. Ground cinnamon contributes aroma and some texture; it does not fully dissolve in coffee.
Keeping the cinnamon modest makes the drink easier to stir and lets the espresso remain noticeable. Taste the finished latte before deciding whether you want a stronger spice flavor.

Use these quantities as home starting points and adjust to taste. Times are estimates; allow extra time for an espresso machine to warm up. US volume measures are approximate metric conversions.
Equipment
Espresso maker, milk frother or small saucepan, spoon, and a 12 fl oz mug.
Ingredients
- 1 double espresso, about 2 fl oz (60 ml)
- 3/4 cup (180 ml) milk
- 2 teaspoons (8 g) packed light brown sugar
- 1/8 teaspoon ground cinnamon
- 1 tablespoon (15 ml) hot water
- 1/4 teaspoon vanilla extract
Instructions
- Dissolve the sugar. Stir brown sugar and hot water in the mug until the sugar crystals disappear.
- Add flavor and coffee. Stir cinnamon and vanilla into the sugar mixture. Prepare the espresso and add it to the mug, stirring well.
- Texture the milk. Warm and lightly froth the milk using your equipment instructions. Aim for fine bubbles rather than stiff foam.
- Finish the latte. Pour the milk into the cinnamon coffee. Stir from the bottom and serve immediately with a spoon to redistribute any settling spice.
Tips and adjustments
Cinnamon settles?
That is expected with ground spice. Stir the cup again or use a cinnamon-flavored coffee syrup for a smoother commercial-syrup style.
Sugar clumps?
Dissolve it in hot water before adding the other ingredients. Brown sugar can be difficult to distribute once cold milk enters the cup.
Want less sweetness?
Reduce the sugar by 1/2 teaspoon at a time. Keep cinnamon unchanged for the first comparison so you can judge the sweetness separately.
Common questions
Is cinnamon dolce the same as pumpkin spice?
No. This recipe focuses on cinnamon, brown sugar, and vanilla. Pumpkin spice blends commonly include several spices, and our pumpkin latte also contains pumpkin puree.
Can I use white sugar?
Yes. Use the same measured amount as a starting point. The drink will have a simpler sugar flavor without brown sugar’s molasses note.
